Mixed Fruit Jam
INGREDIENTS
1⁄2 Bottle 1⁄2 lb (225g) Dried Peaches
1⁄2 Pint (285ml) Water
1⁄2 lb (225g) Pears
1 1⁄2 lb (700g) Apples
1⁄8 Pint (75ml) Water
4 lb (1.7kg) Sugar
1⁄2 Bottle Certo
METHOD
- Soak the dried peaches in water for at least 4 hours.
- Peel and core apples and pears and cut into slices. Put in a pan with the peaches and the water.
- Cover and simmer gently until tender (approx. 15 minutes).
- Add sugar, stir until dissolved.
- Bring to a full rolling boil and boil hard for 3 minutes.
- Remove from the heat and stir in the Certo.
- Skim if necessary.
- Pot and cover in the usual way.
MAKES 6lb OF JAM
