INGREDIENTS
2 lb (0.9 kg) Ripe Figs
Juice of 2 Lemons
3.5 lb ( 1.5 kg) of sugar
1 Bottle of Certo
METHOD
- Use only fully ripe fruit. Remove stem ends of figs and crush thoroughly.
- Place in a large preserving pan the juice of 2 lemons the 2 lbs of figs and 3 ½ lbs sugar.
- Mix well and heat slowly until the sugar has dissolved.
- Bring to a full rolling boil, stirring constantly.
- Boil hard for 2 minutes, then remove from the heat and stir in the Certo.
- Skim, pot and cover in the usual way.
