Dried Apricot Jam
INGREDIENTS
0.5 lb (0.2 kg) Dried Apricots
3 tbsp Lemon Juice
1.5 pints (850 ml) of water
3 lb (1.4 kg) of sugar
1 Bottle of Certo
METHOD
- Wash the fruit and leave to soak for at least 4 hours in the 1.5 pints of water.
- Simmer in a covered pan for about 30 minutes to break up the fruit.
- Measure into the pan 1.5 pints prepared fruit pulp, making up the volume with water as necessary.
- Add the lemon juice and sugar, heat gently, stirring occaisonally, until the sugar has dissolved.
- Bring to a full rolling boil and boil rapidly for 1 minute stirring occaisonally.
- Remove from heat and stir in the Certo, and skim if necessary
- Pot and cover in the usual way.
