    0.5 lb (0.2 kg) Dried Apricots
    3 tbsp Lemon Juice
    1.5 pints (850 ml) of water
    3 lb  (1.4 kg) of sugar
    1 Bottle of Certo

  • Wash the fruit and leave to soak for at least 4 hours in the 1.5 pints of water.
  • Simmer in a covered pan for about 30 minutes to break up the fruit.
  • Measure into the pan 1.5 pints prepared fruit pulp, making up the volume with water as necessary.
  • Add the lemon juice and sugar, heat gently, stirring occaisonally, until the sugar has dissolved.
  • Bring to a full rolling boil and boil rapidly for 1 minute stirring occaisonally.
  • Remove from heat and stir in the Certo, and skim if necessary
  • Pot and cover in the usual way.
