BLACKBERRY JELLY (BRAMBLE)


Ingredients

3 lb (1.4kg) Berries
3 1⁄4 lb (1.5kg) Sugar
1⁄4 pint (150ml) Water
Juice of 1 Lemon
1 Bottle Certo

Method
  • Simmer fruit in water until tender.
  • Strain through a jelly bag.
  • Measure and add water if necessary to make 2 pints (1130ml).
  • Put sugar, lemon juice and fruit juice in pan and heat until sugar has dissolved.
  • Bring to the boil, stir in the Certo.
  • Boil rapidly for 1 minute, stirring occasionally.
  • Skim and pot.

MAKES 5lb OF JELLY.
