BLACKBERRY JELLY (BRAMBLE)


Ingredients

3 lb (1.4kg) Blackberries or a combination of Blackberries & other berries
3 1⁄4 lb (1.5kg) Sugar
1⁄4 pint (150ml) Water (if using frozen fruit there is no need to add the water)
Juice of 1 Lemon
1 Bottle Certo

Method
  • Simmer fruit in water until tender (approximately 20 minutes).
  • Strain through a jelly bag.
  • Measure and add water if necessary to make 2 pints (1130ml).
  • Put sugar, lemon juice and fruit juice in pan and heat until sugar has dissolved, stirring regularly.
  • Bring to a full rolling boil, stir in the Certo.
  • Boil rapidly for 2 minutes, stirring occasionally.
  • Check for a set using a cold plate from the freezer.
  • If not setting on the cold plate, reboil for an additional 2 minutes and test again.
  • Skim and pot into warm sterilised jars.

MAKES 5lb OF JELLY.
