WHOLE STRAWBERRY JAM


Ingredients

2 1⁄4 lb (1kg) small Strawberries
3 tbsp (50ml) Lemon Juice (1 Large Lemon)
3lb (1.4g) Sugar
1⁄2 Bottle Certo

Method
  • Prepare the fruit and put into pan with the lemon juice and sugar, and stand for 1 hour stirring occasionally.
  • Heat slowly, until the sugar has dissolved, stirring occasionally; add a small knob of butter or margarine.
  • Bring to a full rolling boil and boil rapidly for 3 to 4 minutes.
  • Remove from the heat, add the Certo, and leave to cool for 20 minutes to prevent floating fruit.
  • Skim, pot and cover in the usual way.

MAKES 5lb OF JAM
