FRESH FIG JAM


Ingredients
2 lb (0.9 kg) Ripe Figs
Juice of 2 Lemons
3.5 lb  ( 1.5 kg) of sugar
1 Bottle of Certo

Method
  • Use only fully ripe fruit. Remove stem ends of figs and crush thoroughly.
  • Place in a large preserving pan the juice of 2 lemons the 2 lbs of figs and 3 ½ lbs sugar.
  • Mix well and heat slowly until the sugar has dissolved.
  • Bring to a full rolling boil, stirring constantly.
  • Boil hard for 2 minutes, then remove from the heat and stir in the Certo.
  • Skim, pot and cover in the usual way.
