1 Lemon
3 lbs Sugar
1 bottle certo

billberry jam

  • Use only fruit which is fully ripe. Crush berries and add juice of 1 lemon and grated rind of half a lemon.
  • Measure sugar and 2 1/4 lbs prepared fruit into a large preserving pan, and mix well.
  • Heat slowly until the sugar has dissolved then bring to a full rolling boil for 2 minutes.
  • Remove from the heat and stir in the Certo. Skim, pot and cover in the usual way.
