BANANA AND CRANBERRY JAM


Ingredients
280g Cranberries
500g of mashed banana
1600g sugar
350ml water
15ml (1 tbsp) lemon juice
½ bottle Certo

Method
  • Simmer the cranberries in the water for 10 minutes or until the skins have softened.
  • Add the mashed banana, sugar, and lemon juice, stir well and heat to the boil.
  • Bring to a full rolling boil, and boil for one minute.
  • Remove from the heat and stir in the Certo
  • If desired, test a small sample for a set. If not sure, you can boil rapidly for a minute or two before potting up.
